Ingredients
  

  • 2 pounds chicken wings split, tips discarded

For The Rub

  • 1 tablespoon brown sugar
  • tablespoon chipotle powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground mustard powder
  • 1 teaspoon salt
  • ½ teaspoon pepper

Glaze

  • 1 mango peeled and cut from the seed
  • 1 tablespoon apple cider
  • 2 tablespoon brown sugar

Instructions
 

  • Combine the brown sugar, chipotle powder, smoked paprika, ground mustard powder, salt, and pepper in a small bowl.
  • Toss the chicken wings in this flavorful dry rub, ensuring they are well coated. Let them marinate in the fridge for 1-2 hours.
  • Preheat the grill to medium-high heat.
  • Peel the mango and cut it into halves. Toss the mango halves in brown sugar. Place them on the preheated grill and let them cook for 3-4 minutes per side or until they become beautifully caramelized.
  • Transfer the mango to a blender or food processor. Add the apple cider and blend until you achieve a smooth sauce. If needed, add 1-2 tablespoons of water to reach your desired sauce consistency.
  • Place the marinated chicken wings on the grill over medium-high heat. Grill them until they reach an internal temperature of 165°F (74°C), ensuring they are cooked thoroughly and have that delicious grilled crust. This usually takes about 20-25 minutes, turning occasionally for even cooking.
  • Drizzle the luscious mango sauce generously over the grilled wings and serve the extra on the side for dipping.
  • Seve and enjoy!

Notes

Chef Jenn's Tips:
  • For extra heat, increase the amount of chipotle powder in the dry rub.
  • Use fresh mango when it's in season for the best flavor, but you can also use frozen mango in a pinch.
  • Don't skip marinating the wings; it enhances their flavor and tenderness.
  • If you don't have apple cider, you can substitute it with apple juice.
