The secret to a flavorful Greek grilled chicken lies in the marinade. Allow the chicken to marinate for at least 4-6 hours, but if you can, let it sit overnight. The longer it marinates, the more flavors it absorbs.
If you don't have fresh garlic, garlic powder can be a good substitute but remember that fresh always tastes better.
Lemon juice can also be added to the marinade for an extra zing.
Don't overcook the chicken! Pull the chicken off the grill at about 160F, and the carryover cooking will finish it.
Just like beef, let the chicken rest for about 10 minutes before serving to lock in all the juices.
