2cupstzatziki
1shallotfinely diced
2tablespoonsdillfinely chopped
2tablespoonscaperscoarsely chopped

Instructions
Combine the olive oil, lemon juice, oregano, and garlic in a large bowl. Add a pinch of salt and a few grinds of fresh black pepper, then toss to coat and set aside for 20-30 minutes to marinate.
Preheat your Ninja Woodfire Outdoor Grill to Grill, and high. Add about 20 minutes to the timer.
Skewer the marinated pork chunks onto metal skewers or soaked bamboo skewers, and when prompted, add them to the Ninja.
Grill on high, with the lid open, for 3-4 minutes on each side or until the pork reaches an internal temperature of 145°F on a digital thermometer.
Remove the pork to rest.
Make the sauce by combining the tzatziki with finely diced shallot, chopped dill, capers, and a drizzle of honey. Mix well.
Serve the pork with the sauce and dig in!

You can use Woodfire Smoke to add a kiss of smoke to this dish if you like, but then you’ll need to grill with the lid closed. Watch the cooking time, and don’t overcook the pork. It’s ready at 145-F.
