I love this quick and easy version of souvlaki. Pork tenderloin is the perfect meat for this dish – it’s tender, delicious, and takes on the flavor from the marinade. Ready in under an hour, including marinating time, pass the pita and dig in!

I first fell in love with souvlaki after dining in Montreal. That was more than 30 years ago when Montreal had (and still does) a large Greek community, and I had my first taste of souvlaki. That was the start of my lifelong love of Mediterranean food.

Souvlaki is such an easy recipe to master. You can make it with pork or chicken and eat it as it is with a side of rice and Horiatiki Salad, or enjoy it in a pita with fresh veggies and tzatziki.

Ingredients

  • Pork tenderloins – Silver skin trimmed and cut into 1-inch cubes.
  • Olive oil
  • Lemon juice
  • Dried oregano
  • Garlic – Minced.
  • Salt and freshly ground pepper

For the Sauce:

  • Tzatziki – Make your own or use store-bought.
  • Shallot – Finely diced.
  • Dill – Finely chopped.
  • Capers – Coarsely chopped.
  • Honey – Or to taste.

How To Make Pork Souvlaki on a Ninja Woodfire Outdoor Grill

  1. Combine the olive oil, lemon juice, oregano, and garlic in a large bowl. Add a pinch of salt and a few grinds of fresh black pepper, then toss to coat and set aside for 20-30 minutes to marinate.
  2. Preheat your Ninja Woodfire Outdoor Grill to Grill, and high. Add about 20 minutes to the timer.
  3. Skewer the marinated pork chunks onto metal skewers or soaked bamboo skewers, and when prompted, add them to the Ninja.
  4. Grill on high, with the lid open, for 3-4 minutes on each side or until the pork reaches an internal temperature of 145°F on a digital thermometer.
  5. Remove the pork to rest.
  6. Make the sauce by combining the tzatziki with finely diced shallot, chopped dill, capers, and a drizzle of honey. Mix well.
  7. Serve the pork with the sauce and dig in!

  • You can use Woodfire Smoke to add a kiss of smoke to this dish if you like, but then you’ll need to grill with the lid closed. Watch the cooking time, and don’t overcook the pork. It’s ready at 145-F.
