This is one of those sandwiches that works for lunch, dinner, or whenever comfort food is calling. Serve it with chips, a simple salad, or enjoy it exactly as it is and watch it disappear. If you like grilled cheese taken to the extreme, this one’s going straight into the regular rotation.

I love using my Ninja Woodfire Outdoor Grill for quick and easy recipes like this. I don’t use the smoke setting, but you totally could. I find that the residual smoke flavor in the unit gives this sandwich just the right amount of smoke. 

This recipe makes one meaty pulled pork grilled cheese sandwich, but you can scale it up to make as many as you need. I can fit about 4 sandwiches easily on my Ninja.

Ingredients

  • Pulled pork – Leftover pulled pork works great. Store-bought or homemade both work. Reheat it slightly before assembling so it melts the cheese faster. I prefer to use UNsauced pulled pork so that my sandwich isn’t too soggy.
  • Shredded cheddar – Sharp cheddar has the most flavor, but mild or medium cheddar works too. I recommend shredding your own cheese with a rotary grater. Pre-shredded cheese is coated with anti-caking agents that make it gritty and prevent smooth melting.
  • Butter – I cook with salted butter. Unsalted butter also works; use what you have.
  • Sourdough bread – Thick-cut sourdough holds up to the filling without getting soggy. Texas toast or thick white bread also works.
  • Pickled onions – Drain them well before adding or they’ll make the sandwich soggy. Pickled red onions add tang and cut through the richness.

How to Make Ninja Woodfire Pulled Pork Grilled Cheese

Preheat the Ninja Woodfire Grill on High with the lid closed and set the timer for 10 minutes. The grill takes a bit to fully preheat, so make sure everything is prepped and ready before you start cooking. Use the griddle plate for this recipe, not the grill grates.

Butter one side of each slice of sourdough bread evenly, going all the way to the edges for the best browning.

Place the bread slices butter-side down on the hot griddle plate. Work quickly once the lid is open, as the Woodfire holds heat aggressively.

Top each slice of bread with half of the shredded cheese, spreading it evenly. Spoon the pulled pork over the cheese, keeping it centered so it doesn’t spill out. Add a small handful of well-drained pickled onions to one side of the sandwich.

Close the lid and cook for 2 to 3 minutes, until the bottom of the bread is lightly golden and the cheese begins to melt.

Using a spatula, fold the sandwich together. Close the lid again and cook for 1 to 2 minutes. Flip the sandwich carefully and cook for another 1 to 2 minutes, until both sides are golden brown and the cheese is fully melted.

Remove from the grill, slice if desired, and serve immediately while hot and gooey.

Storage

This sandwich is best enjoyed fresh. If needed, leftovers can be wrapped and refrigerated for up to 1 day, then reheated on the griddle or in a skillet until warmed through and crispy again.
