Sizzling Thai Pork & Green Beans on the Blackstone Griddle

Ingredients
  

for the sauce

  • 2 tablespoons fish sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar

For the stir-fry

  • 1 pound ground pork
  • 1 pound green beans cut small
  • ½ cup onion sliced
  • 4 cloves garlic finely chopped
  • 2 tablespoons canola oil divided
  • 2 tablespoons cilantro chopped, optional garnish
  • 2 green onions sliced, optional garnish

Instructions
 

  • Preheat your Blackstone Griddle to medium-high.
  • Combine the fish sauce, oyster sauce, soy sauce, and brown sugar in a small bowl. Stir until the sugar is dissolved. Set aside.
  • Add 1 tablespoon of canola oil to the griddle top. Once the oil is shimmering, add the ground pork. Use a spatula to break up the meat and spread it out into an even layer. Let it cook undisturbed for a few minutes to develop a nice sear.
  • Add the sliced onion to the pork and stir it in then add the green beans to the griddle, stirring them into the pork mixture. Cook for an additional 5-7 minutes, or until the green beans are tender but still crisp.
  • Add the garlic and cook for an additional minute.
  • Pour the prepared sauce over the pork and green beans. Stir everything together until the sauce evenly coats the ingredients. Let it cook for another 1-2 minutes, allowing the flavors to blend together.
  • Add the remaining oil to a spot on the griddle and heat it. Crack the eggs onto the griddle and cook until sunny-side up.
  • Garnish with the eggs, fresh cilantro or sliced green onions if desired. Serve hot with a side of rice and enjoy!

Notes

Chef Jenn's Tips:

  • Don't overcrowd the griddle. Cook in batches if necessary, to ensure that everything gets cooked without steaming and cooks evenly.
  • Adjust the level of heat according to your preference. If you like things spicy, add a sprinkle of red pepper flakes or finely chopped Thai chilies.
  • Feel free to customize it with your favorite veggies! Bell peppers, snap peas, or even thinly sliced carrots would all be delicious additions.
