Add 1 tablespoon of canola oil to the griddle top. Once the oil is shimmering, add the ground pork. Use a spatula to break up the meat and spread it out into an even layer. Let it cook undisturbed for a few minutes to develop a nice sear.
Add the sliced onion to the pork and stir it in then add the green beans to the griddle, stirring them into the pork mixture. Cook for an additional 5-7 minutes, or until the green beans are tender but still crisp.
Add the garlic and cook for an additional minute.
Pour the prepared sauce over the pork and green beans. Stir everything together until the sauce evenly coats the ingredients. Let it cook for another 1-2 minutes, allowing the flavors to blend together.
Add the remaining oil to a spot on the griddle and heat it. Crack the eggs onto the griddle and cook until sunny-side up.
Garnish with the eggs, fresh cilantro or sliced green onions if desired. Serve hot with a side of rice and enjoy!

Don't overcrowd the griddle. Cook in batches if necessary, to ensure that everything gets cooked without steaming and cooks evenly.
Adjust the level of heat according to your preference. If you like things spicy, add a sprinkle of red pepper flakes or finely chopped Thai chilies.
Feel free to customize it with your favorite veggies! Bell peppers, snap peas, or even thinly sliced carrots would all be delicious additions.
