- Pesto sauce: Easy to make. Mix 1 tbsp. basil pesto with ¼ cup mayo.

Caprese refers to a salad that consists of sliced mozzarella, fresh sliced tomatoes, and fresh basil and is drizzled with olive oil. The salad is named after the island of Capri, in Italy, where historians believe the salad originated.

Storage
Store any leftover Grilled Chicken Caprese Sandwich in an airtight container in the fridge for up to 2 days. After that, the bread will get too soggy from the tomato. You can eat the leftover sandwich cold or reheat it in your air fryer or toaster oven.

Grilled Chicken Caprese Sandwich
Ingredients
- 2 bakery fresh buns cut in half
- 2 grilled chicken breasts sliced in half horizontally if thick
- 1/4 cup mayonnaise
- 1 tablespoons basil pesto
- 2 slices fresh mozzarella
- 2 slices tomato
- lettuce leaves
Instructions
- Toast the split buns.
- Make the pesto sauce by mixing together the basil and mayo in a small bowl.
- Spread 2 tablespoons of pesto-mayonnaise on the cut side of the top buns.
- Layer the grilled chicken, mozzarella, tomato and lettuce on top of the bottom bun.
- Put the tops on the buns and enjoy!
